How do I make it stop? (AKA dynamic DHCP)

This shouldn't really have much to do with DHCP. That's about the PXE
configuration. fai-chboot can be used to alter that (well, you know that), and
the server and client can be configured to do that automatically near the end of
the install. Look at your fai.conf and probably the fai-guide.
