Instead of root=/dev/nfs nfsroot= you should use
root=1.2.3.4:/srv/.......

> now, Dracut is able to mount the NFS share, but the very last line I see is „starting permit user sessions“ ( I had to capture a video to see it)  and the client reboots/resets and I have a loop.

I guess the nfsroot is broken. Do you have this line in your
/etc/fai/NFSROOT?
