I added lvm2 to /etc/fai/NFSROOT, and "dm-mod" to the kernelmodules 
variable in fai/config/class/20-hwdetect.source to make it work for 
me with FAI 3.1.  But I had trouble with the disk_config file too, so 
I do partitioning with a hook.
