You can try to build an own fai Kernel. AFAIK it's described in
/usr/share/doc/fai-kernels How to build your own fai.kernels package.
You must then change the entry for the Kernel in make-fai-nfsroot-conf
and rebuild the nfsroot. (alternatively put your specific fai-kernels
package in the nfsroot, chroot into it, and install it manually with
dpkg, but this change will only last until the next rebuid of the
nfsroot.
