So let me try to add what I was planning to say before:

- Yes, tasksel is the way to go. Maybe do tasksel --list-tasks on a running
  system.
- Use those tasks in your package_config files, as follows:

PACKAGES taskinst
mail-server
ssh-server

The main point is to use taskinst instead of install/aptitude.
