If your Debian mirror is "correct" and working, you should not need to
remove anything from the debootstrap config in make-fai-nfsroot.conf.
Also, you don't need to run fai-setup again if you change the mirrorhost
in /etc/fai, you only need make-fai-nfsroot.
Please tell us what you did to set up the mirror. Did you test the
mirror, e.g. by trying to access it with and ftp/http client? Does it
look the same as, for example ftp.debian.org? Can you install some
package on an already installed host if you change
it's /etc/apt/sources.list to use that mirror (don't forget apt-get
update afterwards!)
