Multiple sources.lists

We build Debian-based servers and firewalls for our customers, but we 
are moving to Debian-based workstations in our office. I want to run the 
office desktops on a subset of unstable, but the servers must be based 
on stable. Do I need to have two seperate FAI build servers and 
nfsroots? Has anyone done multiple source list builds?
